I'd think something would have to be wrong for lube to make a difference.

Yes, it would. Hammer-sear geometry prevents this, if correct. Even a friction free hammer-sear contact shouldn't double if properly done.

Keyword being proper, and for a gun to double, the hammer needs to catch on the sear a little. Ie...poor fit.

Blr is correct in that lube would only magnify a problem, not cause it.

Yes, it happens. Lubrication can cause the doubling problem. Which lube are you using for your gun?
